Ingredients:

  • 2 slices of deli ham
  • 2 eggs
  • Salt and pepper, to taste
  • Chopped fresh herbs (optional), such as parsley or chives

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly coat a muffin tin with cooking spray or oil.
  2. Take each slice of deli ham and press it gently into a muffin cup, creating a little ham cup.
  3. Crack one egg into each ham cup. If the ham cup is small, you might need to break the yolk or beat the egg slightly to fit it better.
  4. Season each egg with a pinch of salt and pepper to taste.
  5. If desired, sprinkle some chopped fresh herbs over the eggs for added flavor.
  6. Place the muffin tin in the preheated oven and bake for about 12-15 minutes, or until the egg whites are set and the yolks are cooked to your liking. Keep an eye on them to avoid overcooking.
  7. Once done, remove the muffin tin from the oven and let the ham and egg cups cool for a few minutes before carefully removing them from the tin.
  8. Serve warm and enjoy your delicious 1 Point Weight W Ham and Egg Breakfast Cups!
