This creamy chicken skillet is rich, comforting, and packed with tender chicken, earthy mushrooms, fresh spinach, and Parmesan. It comes together in one pan for an easy weeknight dinner with a deliciously creamy garlic sauce.
Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 3 cups fresh spinach
- 1 cup heavy cream
- ½ cup chicken broth
- ¾ cup freshly grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon butter
- 2 tablespoons chopped fresh parsley
- Optional: ¼ teaspoon red pepper flakes
Instructions
- Season the chicken with salt, pepper, paprika, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5–6 minutes per side, or until golden and cooked through. Remove and set aside.
- In the same skillet, melt the butter. Add the mushrooms and cook for 4–5 minutes until browned.
- Add the minced garlic and cook for about 30 seconds.
- Pour in the chicken broth and heavy cream. Stir well, scraping up any browned bits from the bottom of the pan.
- Reduce the heat to medium-low and stir in the Parmesan cheese. Simmer for 2–3 minutes until the sauce thickens.
- Add the spinach and cook until wilted.
- Return the chicken to the skillet and spoon the creamy sauce over it. Simmer for another 2–3 minutes.
- Garnish with fresh parsley and optional red pepper flakes. Serve warm.

Absolutely. Broccoli, zucchini, or sun-dried tomatoes are delicious additions.
What should I serve with it?
Serve with roasted vegetables, cauliflower rice, pasta, rice, or a fresh green salad.
