If you always have canned green chiles in the pantry, this Cheesy Green Chile Breakfast Casserole is perfect for a tasty and easy breakfast idea! And this tasty breakfast casserole is extra low in carbs, loaded with cheese, and gluten-free!

INGREDIENTS

  •  1 1/2 cups cottage cheese
  •  16 eggs
  •  one 7 oz. can diced green chiles (see notes)
  •  2 3/4 cups grated Cheddar-Jack cheese (see notes)
  •  1 bunch green onions (or more)
  •  1 tsp. Spike Seasoning (see notes)
  •  salt and fresh-ground black pepper to taste

INSTRUCTIONS

  1. Preheat oven to 375F/190C and spray a large casserole dish with non-stick spray. (I used a casserole dish that was 8 inches x 12 inches and 3 inches deep. A regular 9 inch x 13 inch casserole would also be great.)
  2. Put the cottage cheese into a strainer and rinse, then let it drain. (People are always asking me if the cottage cheese really has to be rinsed, but when I experimented the first time without rinsing the cottage cheese, the breakfast casserole was too moist and the top got too brown before it was cooked in the center. So I recommend rinsing it!)
  3. While cottage cheese drains, beat the eggs well.
  4. Thinly slice the green onions. (Save a few tablespoons of sliced green onions to garnish the top.)
  5. Put drained cottage cheese into the bottom of the casserole dish.
  6. Then add the diced green chiles (affiliate link), 2 cups of the Cheddar-Jack cheese, sliced green onions, Spike Seasoning (affiliate link) or another all-purpose seasoning blend, and a little salt and fresh-ground black pepper.
  7. Use a fork to gently “stir” so ingredients are well combined. Then add  eggs and “stir” again.
  8. Top the casserole with the other 3/4 cup grated Cheddar-Jack cheese.
  9. Bake 40 minutes, or until the eggs are firm and the top is starting to brown. (If you use a shallower baking dish the cooking time might be a little shorter.)
  10. Serve hot, garnished with sliced green onions if desired.
  11. This is great with sour cream added at the table, and I like a dash of Green Tabasco Sauce (affiliate link) on mine.

NOTES

 

Diced green chiles (affiliate link) are the slightly-spicy Anaheim chiles, but use a 4 oz. can if you want less heat.

Any blend of grated cheese will work for this recipe, and Mexican Blend will be especially good. And of course you can use less cheese if you prefer!
