– Caprese Stuffed Garlic Butter Portobellos
Ingredients:
– 4 large portobello mushrooms
– 2 tablespoons unsalted butter, melted
– 4 cloves garlic, minced
– 1 cup cherry tomatoes, halved
– 1 cup fresh mozzarella balls, halved
– 1/4 cup fresh basil, chopped
– 1 tablespoon balsamic glaze
– Salt and pepper to taste
– Olive oil for drizzling
Directions:
1. Preheat your oven to 375°F (190°C).
2. Clean the portobello mushrooms with a damp cloth and remove the stems.
3. In a small bowl, mix melted butter with minced garlic, then brush the mixture over the mushrooms.
4. Place the mushrooms, gill side up, on a baking sheet lined with parchment paper.
5. In a mixing bowl, combine cherry tomatoes, mozzarella, basil, balsamic glaze, salt, and pepper.
6. Spoon the tomato and mozzarella mixture evenly into each portobello cap.
7. Drizzle a little olive oil over the stuffed mushrooms.
8. Bake for 15-20 minutes, or until the cheese is melted and bubbly.
9. Remove from the oven and let cool for a few minutes before serving.
