Ingredients:

  • 1 lb cooked shrimp (peeled & deveined, tails off)

  • 1–2 ripe avocados, diced

  • 1 cup cherry tomatoes, halved

  • 1/4 red onion, thinly sliced

  • 1/4 cup chopped fresh cilantro

  • 2 tbsp olive oil

  • Juice of 2 limes (zest one of them for extra zing!)

  • Salt & pepper to taste

  • Optional: 1 jalapeño, finely diced (for heat)


Instructions:

  1. Make the Dressing:

    • In a small bowl, whisk together olive oil, lime juice, lime zest, salt, pepper, and jalapeño (if using).

    • In a large bowl, combine the shrimp, avocado, cherry tomatoes, red onion, and cilantro.

  3. Toss & Chill:

    • Pour the dressing over the salad and gently toss to combine.

    • Chill for 15–30 minutes (if you have the patience!) to let the flavors meld.

  4. Serve:

    • Enjoy as is, or serve over mixed greens, in lettuce cups, or with cauliflower rice for a low-carb meal.
