INSTRUCTIONS
-
Heat the vegetable oil in a large skillet over medium heat. Add the onion, garlic, and ginger and sauté until the onion becomes translucent, about 5 minutes.

Add the ground chicken to the skillet. Cook, breaking it up with a spoon, until it is fully cooked and no longer pink, about 5-7 minutes.
-
Stir in the hoisin sauce, soy sauce, rice wine vinegar, sriracha, and sesame oil. Cook for another 2-3 minutes to let the flavors meld together.
-
Add the chopped water chestnuts and green onions to the skillet. Season with salt and pepper to taste. Stir well to combine and cook for another 2 minutes.
-
To serve, spoon a generous portion of the chicken mixture onto a lettuce leaf. If desired, you can also serve with a side of cooked white rice. Enjoy!
DONNA’S NOTES
Hoisin sauce, soy sauce, rice wine vinegar, sriracha, and sesame oil are all key ingredients in this recipe that give it its distinctive Asian flavor. If you don’t have these on hand, they are worth investing in as they can be used in many other recipes.
Water chestnuts add a nice crunch to the dish. If you can’t find them, you can substitute them with diced cucumber or radish for a similar texture.
The lettuce wraps can be served with jasmine rice for a more substantial meal, but they are also very satisfying on their own.
Adjust the amount of sriracha according to your taste. If you like it spicier, feel free to add more.
You can prepare the chicken mixture ahead of time and store it in the refrigerator. Just heat it up before serving.
Leftover chicken mixture can be stored in an airtight container in the refrigerator for up to 3-4 days. To reheat, simply warm it in a skillet over medium heat or in the microwave until heated through.
