  • 8 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • ½ cup mozzarella cheese
  • 1½ cups fresh spinach, chopped

  • 3 green onions, sliced
  • ½ small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp dried oregano
  • ¼ tsp nutmeg (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9-inch pie dish or quiche pan.

  3. Add the spinach and cook until wilted. Remove from the heat and let cool slightly.

  5. Stir in the cooked spinach mixture, ham, green onions, cheddar cheese, and half of the mozzarella.
  6. Pour the mixture into the prepared baking dish.
  7. Sprinkle the remaining mozzarella evenly over the top.
