INGREDIENTS
  • 2 lbs lean ground beef
  • 1 green bell pepper, diced
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 2 1/2 tablespoons flour
  • 2 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • ½ teaspoon cumin
  • ½ teaspoon cayenne pepper
  • 2 cups beef or vegetable broth
  • ¾ cup ketchup
  • 1 ½ tablespoons Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 ¼ cup cheddar cheese, shredded
PREPARATION
  1. In a large pot or dutch oven, brown ground beef and onion for 3-4 minutes, then add garlic, flour, brown sugar, salt, pepper, cumin and cayenne. Stir mixture and break up meat into pieces. Continue cooking until meat is fully browned and liquid has cooked off.
  2. Add broth, ketchup, mustard, and worcestershire sauce. Stir to combine and bring to a gentle simmer. Stirring regularly, continue to simmer until very thick, about 30 minutes. Mix in ½ cup of the cheese and remove from heat.
  3. Turn on oven broiler on low.
  4. Transfer dip to an 8×8 baking dish (or keep in pot if using an oven-safe dutch oven) and sprinkle remaining ¾ cup of cheese on top.
  5. Broil for 3-5 minutes, keeping a close eye on the dip as it will brown quickly.
  6. Serve hot with toasted bread or crackers.
