Sheet Pan Quesadillas
Make this sheet pan quesadillas instead of frying them in a nonstick pan or large skillet, the recipe starts by making the ground beef sauce that you are going to put between layers of tortillas.
INGREDIENTS
- 1 tbsp Olive Oil
- 2 Bell Peppers Chopped
- 1 Onion Chopped
- 1 ½ lb Ground Beef
- 1 tsp Chili Powder
- 1 tsp Cumin
- ½ tsp Paprika
- Salt To taste
- Ground Black Pepper To taste
- 8 Large Flour Tortillas
- 2 cups grated gouda cheese
- 2 Green Onions Thinly sliced
- Sour cream For garnish
- Pico de Gallo For garnish
INSTRUCTIONS

First, preheat the oven to 425 F or 220 C degrees.

Warm the olive oil in a nonstick frying pan over medium heat.

Stir in the diced onions and bell peppers and cook for about 5 minutes. Remove from the skillet and set aside.

In the same skillet, add the ground beef and cook for about 5 minutes until no longer pink in colour.

Stir in the paprika powder, chilli powder, cumin and season with salt and pepper to taste.

Place six tortillas on a baking sheet lined with a piece of parchment paper.

Top with the ground beef mixture and add the peppers and onions. Sprinkle the grated cheese on top and spring onions as well.

Fold the tortillas towards the centre and place another tortilla in the centre to cover everything up.

Bake until tortillas are beginning to turn crispy and golden brown in colour. It will take around 25 minutes.

Serve with sour cream and some spring onions as well if desired.
