Sausage, Onion, Bell Peppers & Tomatoes over Rice

A hearty, comforting skillet meal with savory sausage, sweet onions, colorful bell peppers, and juicy tomatoes served over fluffy rice. It is simple, filling, and packed with homemade flavor.

Ingredients

  • 1 lb sausage, sliced into rounds
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 2 medium tomatoes, diced
  • 2 cups cooked white or brown rice
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper
  • 1/2 cup chicken broth
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned on both sides. Remove and set aside.
  2. In the same skillet, add the onion and bell peppers. Cook for 5–7 minutes until softened and lightly caramelized.
  3. Add the garlic and cook for about 30 seconds.
  4. Stir in the diced tomatoes, Italian seasoning, smoked paprika, salt, and black pepper.
  5. Pour in the chicken broth and return the sausage to the skillet. Stir everything together.
  6. Cover and simmer for 8–10 minutes, allowing the tomatoes to break down slightly and the flavors to come together.
  7. Spoon the hot sausage and vegetable mixture over cooked rice.
  8. Finish with fresh parsley and serve warm.
