Ingredients
- ½ medium red cabbage, chopped
- 2 cups fresh or frozen blueberries
- 6 cups water
- 2 tablespoons fresh lemon juice
- 2–4 tablespoons honey (or maple syrup), to taste
- 1 teaspoon fresh grated ginger (optional)
- 2–3 whole cloves (optional)
- 1 cinnamon stick (optional)

Instructions
Step 1: Combine Ingredients
Place the chopped cabbage, blueberries, water, ginger, cloves, and cinnamon stick into a large saucepan.
Step 2: Simmer
Bring to a gentle boil.
Reduce heat and simmer for 25–30 minutes, stirring occasionally.
Step 3: Strain
Pour the mixture through a fine-mesh strainer into a large bowl or pitcher.
Press gently on the solids to extract as much liquid as possible.
Discard or compost the solids.
Step 4: Sweeten
While still warm, stir in the honey until dissolved.
Add the fresh lemon juice and mix well. (The lemon may make the drink appear more pinkish-purple due to the cabbage’s natural pigments.)
Step 5: Chill
Allow the drink to cool completely.
Refrigerate for at least 2 hours.
Serve over ice with lemon slices and mint, if desired.
