Pistachio-Crusted Pear Skewers with Whipped Brie & Cherry Honey
Ingredients
For the Pistachio-Crusted Pear Skewers:
3 ripe pears, cut into thick wedges
1 cup shelled pistachios, finely chopped
2 tbsp honey
1 tbsp melted butter
8 wooden skewers
For the Whipped Brie:
8 oz brie cheese, rind removed
1/4 cup cream cheese, softened
2 tbsp heavy cream
1 tsp lemon juice
1/4 tsp salt
For the Cherry Honey:
1/2 cup cherries, pitted and chopped
1/4 cup honey
1 tbsp water
1 tsp lemon juice
For Garnish (optional):
1 tbsp chopped pistachios
1 tbsp fresh thyme leaves
Directions
Soak wooden skewers in water for 15 minutes if using bamboo skewers.
Thread pear wedges onto the skewers. Brush lightly with honey and melted butter.
Press chopped pistachios onto the pears to create an even crust.
Place the skewers on a parchment-lined baking sheet and bake at 400°F (200°C) for 10–12 minutes, until the pears are tender and the pistachios are lightly toasted.
Meanwhile, blend brie, cream cheese, heavy cream, lemon juice, and salt until smooth and airy. Chill until ready to serve.
Combine cherries, honey, water, and lemon juice in a small saucepan. Simmer for 5–7 minutes until the cherries soften and the mixture becomes syrupy. Allow to cool slightly.
Spread the whipped brie onto a serving platter or individual plates.
Arrange the warm pistachio-crusted pear skewers over the whipped brie.
Drizzle generously with cherry honey.
Finish with chopped pistachios and fresh thyme leaves. Serve warm.
