Ingredients:

  • 1 green bell pepper, thinly sliced (optional for less strict)

  • 1/2 onion, thinly sliced (optional)

  • 6–8 slices provolone or mozzarella cheese

  • 1 tbsp butter or tallow

  • Salt and pepper to taste

  • Garlic powder (optional)

Instructions:

  1. Prep the Filling:

    • In a skillet, melt butter/tallow over medium heat.

    • Add peppers and onions if using. Cook until softened (about 5–6 mins). Remove from skillet and set aside.

  2. Sear the Meat:

    • In the same skillet, quickly sear the sliced steak for 1–2 mins per side. Season with salt, pepper, and garlic powder.

  3. Assemble the Roll Ups:

    • Lay out a slice of cheese.

    • Add a few strips of steak and sautéed veggies on top (if using).

    • Roll it up tightly.

  4. Melt & Crisp:

    • Place roll ups back in the skillet seam-side down and cook for 1–2 mins until the cheese is melted and edges are golden.

  5. Serve Hot!

    • Serve with a side of bone broth or dip in melted cheese for extra indulgence.

  • Want it 100% carnivore? Skip the veggies and just do steak + cheese.
