Oatmeal cream pie cookies!
Welcome to episode 21 of my Christmas cookie series!
Ingredients:
1 cup unsalted butter browned
â…” cup granulated sugar
â…” cup packed dark brown sugar
2 tsp molasses
2 large eggs
2 tsp vanilla extract
2 cups all-purpose flour
2 cups old-fashioned oats
2 tsp salt
1 tsp baking soda
2 tsp ground cinnamon
¼ tsp ground cloves
¼ tsp ground ginger
¼ tsp ground nutmeg
Filling:
1 cup unsalted butter (2 sticks) softened
3 cups powdered sugar
1 tsp vanilla extract
1 tbsp milk
How to:
Start by browning butter. Add butter to a pan and turn on high heat. When it foams and you see brown specks take it off the heat and let it cool.
Combine butter and sugars in a large mixing bowl. Add molasses, eggs and vanilla and mix well. In a separate bowl combine oats, flour, and spices. Mix. Add into your wet ingredients and mix. Using a 1 inch cookie scooper scoop dough onto a parchment lined pan. Refrigerate for 20 minutes. Bake at 350 degrees for 9-11 minutes. Let cool.
While the cookies cool make the icing by combining the ingredients in a mixing bowl and mixing well. Match the cooled cookies into pairs and turn them over. Place a dollop or tow of the icing in the middle of the cookie and make a sandwich.
