🥕🍎 Oat, Apple & Carrot Cake (Healthy & Moist)

🧾 Ingredients

  • 1 cup rolled oats (blend into oat flour or use ready oat flour)

  • ½ cup whole wheat flour (optional – or use all oat flour)

  • 1 cup grated carrots

  • 1 cup grated apple (squeeze extra juice lightly)

  • 2 eggs

  • ¼ cup honey or maple syrup

  • ¼ cup oil (coconut or vegetable)

  • ½ cup Greek yogurt

  • 1 tsp cinnamon

  • ½ tsp nutmeg (optional)

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 1 tsp vanilla extract

  • Pinch of salt

  • ¼ cup chopped walnuts or raisins (optional)

  1. Preheat oven to 180°C (350°F). Grease or line an 8-inch cake pan.

  2. If using rolled oats, blend into fine flour.

  3. In a bowl, whisk eggs, honey, oil, yogurt, and vanilla.

  4. Add grated carrots and apple. Mix well.

  5. In another bowl, combine oat flour, whole wheat flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
