No Sugar No Flour Carrot Cake

Moist, naturally sweet carrot cake made without refined sugar or regular flour. Grated carrots, almond flour, applesauce, warm spices, and crunchy nuts create a rich and satisfying cake with plenty of flavor.

Ingredients

  • 2 cups finely grated carrots
  • 1 cup almond flour
  • ½ cup unsweetened applesauce
  • 2 eggs
  • ¼ cup melted coconut oil or butter
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt

  • 4 oz cream cheese, softened
  • 2 tbsp plain Greek yogurt
  • 1 tsp vanilla extract
  • 1–2 tbsp unsweetened applesauce, as needed for consistency

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
  2. In a large bowl, whisk together the eggs, applesauce, melted coconut oil, and vanilla.
  3. Add the almond flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix until combined.
  4. Fold in the grated carrots, walnuts or pecans, and coconut or raisins if using.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 30–40 minutes, or until a toothpick inserted in the center comes out mostly clean.
  7. Allow the cake to cool completely before removing it from the pan.
  8. For the filling, beat the cream cheese, Greek yogurt, and vanilla until smooth. Add a little applesauce if needed.
  9. Slice the cake horizontally into two layers. Spread the filling between the layers and place the top layer back on.
