Honeycrisp Apple Broccoli Salad
Ingredients:
4 cups broccoli florets, chopped small
1 large Honeycrisp apple, diced (leave the peel on for color & crunch)
1/2 cup dried cranberries
1/2 cup chopped pecans or walnuts (toasted for extra flavor)
1/4 cup red onion, finely diced
For the Dressing:
1/2 cup plain Greek yogurt (or mayonnaise if you prefer)
2 tablespoons apple cider vinegar
1 tablespoon honey or maple syrup
1 teaspoon Dijon mustard
Salt & pepper to taste
Instructions:
Prepare the dressing:
In a small bowl, whisk together Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt, and pepper until smooth.
Mix the salad:
In a large bowl, combine broccoli, diced apple, dried cranberries, nuts, and red onion.
Toss it all together:
Pour the dressing over the salad and toss to coat everything evenly.
Chill & serve:
Refrigerate for at least 30 minutes to allow flavors to blend. Serve cold.
Tips:
For extra crunch, add sunflower seeds.
If making ahead, toss the apples in lemon juice to prevent browning.
