🍍 Honey Pineapple Glazed Salmon
Ingredients:

4 salmon fillets (about 6 oz each)

Salt and pepper, to taste

1 tablespoon olive oil

1 cup pineapple juice (fresh or canned)

2 tablespoons soy sauce

2 tablespoons honey

1 tablespoon brown sugar (optional, for extra sweetness)

2 cloves garlic, minced

1 teaspoon grated fresh ginger (or ½ teaspoon ground)

1 tablespoon cornstarch + 2 tablespoons water (for thickening)

¼ cup pineapple chunks (optional, for topping)

Fresh chopped parsley or green onions (for garnish)

Lime wedges (for serving)
Instructions:

Prepare the glaze:
In a small saucepan, combine pineapple juice, soy sauce, honey, brown sugar, garlic, and ginger. Bring to a simmer over medium heat. -
Thicken the sauce:
Mix cornstarch with water to make a slurry. Add it to the sauce and stir until thickened (about 2–3 minutes). Remove from heat and set aside. -
Cook the salmon:

Season salmon fillets with salt and pepper.

Heat olive oil in a large skillet over medium-high heat.

Add salmon, skin-side down, and cook for 3–4 minutes per side until golden and cooked through.

Glaze the salmon:

Brush the thick pineapple-honey glaze over the salmon during the last minute of cooking.

Let it bubble and caramelize slightly.

Plate the salmon and drizzle with extra glaze.
Top with pineapple chunks and garnish with parsley or green onions.

You can bake the salmon at 400°F (200°C) for 12–15 minutes and brush the glaze halfway through.
