Ingredients

For the Honey Lime Chicken:

Instructions

Step 1: Cook the Rice

Rinse the rice under cold water until the water runs clear. In a saucepan, bring water or broth to a boil, add the rice, reduce heat, cover, and simmer for 15–18 minutes until tender.

Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.


Step 2: Prepare the Avocado Mixture

In a bowl, mash the avocado until creamy but still slightly chunky. Stir in lime juice, chopped cilantro, and a pinch of salt.

Gently fold the avocado mixture into the warm rice until evenly combined. The rice should be creamy, slightly green, and aromatic.


Step 3: Marinate the Chicken

In a bowl, whisk together honey, lime juice, soy sauce, garlic, olive oil, paprika, salt, and pepper.

Add the chicken breasts and coat well. Let them marinate for at least 20 minutes (or up to 2 hours for deeper flavor).


Step 4: Cook the Chicken

Heat a skillet over medium heat. Cook the chicken for about 5–6 minutes per side, or until fully cooked and caramelized.
