- 2 carrots, diced
- 2 celery stalks, diced

- 2 cans (15 oz each) white beans, drained and rinsed

- 1 cup finely chopped spinach or kale

Instructions
- Heat the olive oil in a large soup pot over medium heat. Add the onion, carrots, and celery. Cook for 5–7 minutes, until the vegetables begin to soften.

- Stir in the diced tomatoes, white beans, broth, Italian seasoning, smoked paprika, salt, and black pepper.
