Instructions

  3. Stir in the garlic and cook for 1 minute.
  4. Add the potatoes, lentils, diced tomatoes, vegetable broth, oregano, thyme, paprika, and bay leaf.
  5. Bring to a boil, then reduce the heat and simmer for 30–35 minutes, or until the lentils and potatoes are tender.
  6. Remove the bay leaf and stir in the spinach. Cook for 2–3 minutes until wilted.
  7. Season with salt, black pepper, and lemon juice if using.
  8. Garnish with fresh parsley and serve hot with crusty bread.
