🍴 Fried Chicken Gizzards Recipe

🧂 Ingredients:

  • 1 lb (450 g) chicken gizzards

  • 1 cup buttermilk (or milk with 1 tsp vinegar)

  • 1 cup all-purpose flour

  • ½ cup cornmeal (optional, for extra crunch)

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp cayenne pepper (optional, for heat)

  • Oil for frying (vegetable, canola, or peanut oil)

👩‍🍳 Instructions:

  1. Clean and tenderize the gizzards:

    • Rinse the gizzards well and trim off any excess fat or tough tissue.

    • Place in a pot with water, add a little salt, and simmer for 30–40 minutes until tender.

    • Drain and let cool.

  2. Marinate:

    • Place cooked gizzards in a bowl, pour over the buttermilk, and let them soak for at least 1 hour (or overnight in the fridge).

    • This helps keep them juicy and tender.

  3. Prepare the coating:

    • In a shallow bowl, mix together flour, cornmeal, and all seasonings (salt, pepper, paprika, garlic powder, onion powder, cayenne).

  4. Dredge the gizzards:

    • Remove gizzards from the buttermilk, letting the excess drip off.

    • Coat each piece in the seasoned flour mixture. Press the coating firmly so it sticks well.

  5. Fry:

    • Heat oil in a deep skillet or fryer to 350°F (175°C).

    • Fry the gizzards in batches for 3–5 minutes, or until golden brown and crispy.

    • Avoid overcrowding the pan.

  6. Drain and serve:

    • Remove to a paper towel–lined plate to drain.

    • Serve hot with your favorite dipping sauce (hot sauce, ranch, or honey mustard).

🍽️ Serving Ideas:

  • Pair with coleslaw, mashed potatoes, or fried okra.

  • Great as a snack, appetizer, or side dish.
