🍴 Fried Chicken Gizzards Recipe
🧂 Ingredients:

1 lb (450 g) chicken gizzards

1 cup buttermilk (or milk with 1 tsp vinegar)

1 cup all-purpose flour

½ cup cornmeal (optional, for extra crunch)

1 tsp salt

1 tsp black pepper

1 tsp paprika
-
½ tsp garlic powder
-
½ tsp onion powder
-
½ tsp cayenne pepper (optional, for heat)

Oil for frying (vegetable, canola, or peanut oil)

Clean and tenderize the gizzards:

Rinse the gizzards well and trim off any excess fat or tough tissue.

Place in a pot with water, add a little salt, and simmer for 30–40 minutes until tender.

Drain and let cool.

Marinate:

Place cooked gizzards in a bowl, pour over the buttermilk, and let them soak for at least 1 hour (or overnight in the fridge).

This helps keep them juicy and tender.

Prepare the coating:

In a shallow bowl, mix together flour, cornmeal, and all seasonings (salt, pepper, paprika, garlic powder, onion powder, cayenne).

Dredge the gizzards:

Remove gizzards from the buttermilk, letting the excess drip off.

Coat each piece in the seasoned flour mixture. Press the coating firmly so it sticks well.

Heat oil in a deep skillet or fryer to 350°F (175°C).

Fry the gizzards in batches for 3–5 minutes, or until golden brown and crispy.

Avoid overcrowding the pan.
