  • 2 lb Yukon Gold potatoes

Instructions

  1. Preheat oven to 400°F (200°C).

  3. Slice potatoes very thinly and evenly.
  4. Mix melted butter, olive oil, garlic, thyme, salt, pepper, and paprika.
  5. Toss potato slices in the butter mixture.
  6. Add Parmesan and gently toss again.
  7. Stack the slices into the muffin cups.
  8. Sprinkle with additional Parmesan.

  10. Rest for 5 minutes.
  11. Carefully remove the towers.
