🥒 Creamy Herb Cucumber Bites

✨ Description

Crisp cucumber slices are topped with a savory, creamy mixture made from soft cheese, fresh herbs, and a hint of tanginess. These bite-sized snacks are refreshing, low-carb, and ideal for parties, brunches, or quick healthy snacks. The crunch of the cucumber pairs beautifully with the rich, herby topping.

🧾 Ingredients

For the base:

  • 2 large cucumbers (sliced into thick rounds)

For the creamy topping:

  • 1 cup cream cheese (softened)
  • 2–3 tbsp sour cream or Greek yogurt
  • 1–2 cloves garlic (finely minced)
  • 2 tbsp fresh dill (finely chopped)
  • 1 tbsp fresh parsley (optional)
  • 1 tbsp capers (finely chopped, optional but recommended)
  • 1 tsp lemon juice
  • Salt and black pepper (to taste)

👩‍🍳 Instructions

  1. Prepare the cucumbers
Wash and slice cucumbers into even rounds (about ½ inch thick). Pat them dry with a paper towel to remove excess moisture.
  2. Make the filling
In a bowl, mix cream cheese and sour cream (or yogurt) until smooth.
Add garlic, dill, parsley, capers, lemon juice, salt, and pepper. Mix well until fully combined.
  3. Assemble
Spoon or spread about 1 tablespoon of the creamy mixture onto each cucumber slice.
  4. Chill (optional)
Refrigerate for 15–20 minutes before serving for best flavor.

🍽️ Serving Tips

  • Garnish with extra dill or a small caper on top.
  • Add smoked salmon or shredded chicken for a protein boost.
  • Sprinkle paprika or chili flakes for a bit of heat.

✅ Notes

  • You can substitute cream cheese with ricotta or cottage cheese for a lighter version.
  • Best served fresh to keep cucumbers crisp.
