Chicken Mushroom and Spinach Lasagna

Ingredients:
9 lasagna noodles
2 cups cooked chicken, shredded
2 cups fresh spinach
1 cup sliced mushrooms
3 cups ricotta cheese
1 egg
2 cups shredded mozzarella cheese
2 cups marinara sauce
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Directions:
Preheat oven to 375°F. Cook lasagna noodles according to package instructions. Drain and set aside.
In a bowl, mix ricotta cheese, egg, salt, and pepper. In a separate pan, sauté spinach and mushrooms until tender.
In a baking dish, spread a thin layer of marinara sauce. Layer with noodles, ricotta mixture, shredded chicken, spinach and mushrooms, and mozzarella cheese. Repeat layers.
Top with remaining marinara sauce and Parmesan cheese.
Bake for 35-40 minutes until bubbly and golden. Let cool for 10 minutes before serving.
