Cheesy Vegetable Casserole

A hearty, comforting vegetable casserole made with grated potatoes, zucchini, carrots, herbs, eggs, and plenty of melted cheese. It bakes until golden and bubbly on top while staying soft, creamy, and flavorful inside. Perfect for breakfast, brunch, lunch, or a simple meatless dinner.

Ingredients

  • 4 medium potatoes, peeled and grated
  • 2 medium zucchini, grated
  • 2 carrots, grated
  • 1 small onion, finely chopped
  • 3 large eggs
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ½ cup sour cream or plain Greek yogurt
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons breadcrumbs, optional

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil.
  2. Grate the potatoes, zucchini, and carrots. Place the zucchini and potatoes in a clean kitchen towel and squeeze out as much excess moisture as possible.
  3. In a large bowl, whisk together the eggs, sour cream or Greek yogurt, garlic, oregano, paprika, salt, and black pepper.
  4. Add the grated potatoes, zucchini, carrots, onion, parsley, mozzarella, and cheddar. Mix until everything is evenly combined.
  5. Transfer the mixture to the prepared baking dish and spread it into an even layer. Sprinkle a little extra cheese and breadcrumbs on top if desired.
  6. Bake for 45–55 minutes, or until the casserole is cooked through and the top is deeply golden and bubbling.
  7. Let it rest for 10–15 minutes before slicing. Garnish with fresh parsley and serve warm.

Q&A

Can I prepare this casserole ahead of time?
Yes. Assemble it, cover, and refrigerate for up to 24 hours. Bake when ready, adding a few extra minutes if necessary.

How do I keep the casserole from becoming watery?
The most important step is squeezing excess moisture from the grated zucchini and potatoes before mixing.

Can I use different vegetables?
Absolutely. Bell peppers, spinach, broccoli, mushrooms, or corn can be added or substituted.

Can I make it without breadcrumbs?
Yes. Breadcrumbs are optional. The cheese will still create a delicious golden crust.
