Ingredients

1 lb chicken breasts, cut into bite-sized pieces
2 cups cooked white rice
1 can (10.5 oz) cream of chicken soup
1/2 cup sour cream
1/2 cup chicken broth
1 tsp garlic powder
1 tsp onion powder
1/2 tsp dried thyme
1/2 tsp black pepper
1/2 tsp salt
1 1/2 cups shredded cheddar cheese
1/2 cup shredded mozzarella cheese
2 tbsp butter
Fresh parsley, chopped, for garnish
Directions
Preheat oven: Preheat your oven to 350°F (175°C).
Cook the chicken: In a large skillet, melt the butter over medium heat. Add the chicken pieces and cook until lightly browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Prepare the sauce: In the same skillet, whisk together the cream of chicken soup, sour cream, chicken broth, garlic powder, onion powder, thyme, black pepper, and salt. Cook until heated through, about 2-3 minutes.
Combine rice and chicken: Stir the cooked rice and chicken into the sauce until evenly coated.
Assemble the dish: Transfer the mixture to a greased 9×13-inch baking dish. Top with shredded cheddar and mozzarella cheeses.
Bake: Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
