Blueberry Cottage Cheese Breakfast Bake


Ingredients (Serves 6)

  • 1½ cups cottage cheese

  • 2 large eggs

  • ½ cup rolled oats

  • ½ cup fresh or frozen blueberries

  • 2 tbsp honey or maple syrup

  • 1 tsp vanilla extract

  • ½ tsp baking powder

  • ¼ tsp cinnamon

  • Pinch of salt

  • Cooking spray or butter for greasing


Instructions

  1. Preheat Oven
    Preheat to 350°F (175°C). Grease a small baking dish (8×8 or similar).

  2. Blend Base
    In a blender or bowl, blend/mix cottage cheese, eggs, honey, vanilla, salt, cinnamon, and baking powder until mostly smooth.

  3. Add Oats & Blueberries
    Stir in oats. Gently fold in blueberries.

  4. Bake
    Pour mixture into prepared dish.
    Bake for 35–40 minutes, until set in the center and lightly golden on top.

  5. Cool & Serve
    Let cool for 10 minutes before slicing.
