Blueberry Cottage Cheese Breakfast Bake

1½ cups cottage cheese

½ cup rolled oats

½ cup fresh or frozen blueberries

2 tbsp honey or maple syrup

1 tsp vanilla extract

½ tsp baking powder

¼ tsp cinnamon

Cooking spray or butter for greasing
Instructions

Preheat Oven
Preheat to 350°F (175°C). Grease a small baking dish (8×8 or similar). -
Blend Base
In a blender or bowl, blend/mix cottage cheese, eggs, honey, vanilla, salt, cinnamon, and baking powder until mostly smooth. -
Add Oats & Blueberries
Stir in oats. Gently fold in blueberries. -
Bake
Pour mixture into prepared dish.
Bake for 35–40 minutes, until set in the center and lightly golden on top. -
Cool & Serve
Let cool for 10 minutes before slicing.
