1 lb ground beef (or ground turkey)
-
1 medium onion, chopped
-
1 packet taco seasoning (or homemade taco seasoning)
-
1/2 cup salsa (your favorite kind)
-
1/2 cup canned green chilies (optional for added heat)
-
1/2 cup black beans, drained and rinsed (optional for extra texture)
For the Cheese Layer:
-
1 (8 oz) package cream cheese, softened
-
1 cup sour cream
-
1 1/2 cups shredded Mexican blend cheese (or cheddar and Monterey Jack)
For the Lasagna Layers:
-
12-14 corn tortillas (about 2-3 layers)
-
1-2 cups salsa (for layering)
-
2 cups shredded Mexican blend cheese (or cheddar and Monterey Jack), for topping
Instructions:
-
Prepare the Meat:
-
In a large skillet, heat a little oil over medium heat and sauté the chopped onion until softened (about 3-4 minutes).
-
Add the ground beef (or turkey) to the skillet, cooking and breaking it up as it browns.
-
Stir in the taco seasoning, salsa, green chilies, and black beans (if using). Cook for another 5 minutes until everything is well combined and heated through. Remove from heat and set aside.
-
-
Make the Cheese Layer:
-
In a medium bowl, mix the softened cream cheese, sour cream, and 1 1/2 cups shredded cheese until smooth and well combined. This will create a creamy, cheesy base.
-
-
Assemble the Lasagna:
-
Preheat your oven to 375°F (190°C).
-
Grease a 9×13-inch baking dish with a little cooking spray or oil.
-
Spread a thin layer of salsa on the bottom of the dish to prevent sticking.
-
Layer 3-4 corn tortillas at the bottom of the baking dish. You may need to cut them to fit the dish properly.
-
Spread 1/3 of the meat mixture over the tortillas.
-
Spoon 1/3 of the cheese mixture on top of the meat, spreading it evenly.
-
Repeat these layers (tortillas, meat, cheese) two more times, ending with a layer of tortillas on top.
-
-
Top with Cheese:
-
After layering all the ingredients, sprinkle the remaining 2 cups of shredded Mexican blend cheese on top of the final tortilla layer.
-
-
Bake the Lasagna:
-
Cover the baking dish with aluminum foil and bake for 20 minutes.
-
After 20 minutes, remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly, and the lasagna is heated through.
-
-
Serve:
-
Allow the lasagna to cool for 5-10 minutes before slicing and serving. Garnish with chopped cilantro, sour cream, or extra salsa if desired.
