The Best Mexican Lasagna Ever

Ingredients:

For the Meat Layer:

  • 1 lb ground beef (or ground turkey)

  • 1 medium onion, chopped

  • 1 packet taco seasoning (or homemade taco seasoning)

  • 1/2 cup salsa (your favorite kind)

  • 1/2 cup canned green chilies (optional for added heat)

  • 1/2 cup black beans, drained and rinsed (optional for extra texture)

For the Cheese Layer:

  • 1 (8 oz) package cream cheese, softened

  • 1 cup sour cream

  • 1 1/2 cups shredded Mexican blend cheese (or cheddar and Monterey Jack)

For the Lasagna Layers:

  • 12-14 corn tortillas (about 2-3 layers)

  • 1-2 cups salsa (for layering)

  • 2 cups shredded Mexican blend cheese (or cheddar and Monterey Jack), for topping

Instructions:

  1. Prepare the Meat:

    • In a large skillet, heat a little oil over medium heat and sauté the chopped onion until softened (about 3-4 minutes).

    • Add the ground beef (or turkey) to the skillet, cooking and breaking it up as it browns.

    • Stir in the taco seasoning, salsa, green chilies, and black beans (if using). Cook for another 5 minutes until everything is well combined and heated through. Remove from heat and set aside.

  2. Make the Cheese Layer:
