4 boneless, skinless chicken breasts
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 cup marinara sauce
1/2 cup Italian breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
Directions:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Grease a baking dish.
Prepare the Chicken:
Place each chicken breast between two sheets of plastic wrap and pound to an even thickness.
In a small bowl, combine the mozzarella cheese and grated Parmesan cheese.
Assemble the Rolls:
Place a portion of the cheese mixture in the center of each chicken breast.
Roll up the chicken breasts and secure with toothpicks.
Coat the Rolls:
In a shallow bowl, combine the Italian breadcrumbs, garlic powder, dried basil, dried oregano, salt, and black pepper.
Brush the chicken rolls with olive oil and coat them in the breadcrumb mixture.
Bake:
Place the chicken rolls in the prepared baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the coating is golden brown.
During the last 5 minutes of baking, spoon marinara sauce over the chicken rolls and top with additional mozzarella cheese if desired.
Serve:
Remove the toothpicks and serve the Baked Mozzarella Chicken Rolls hot.
