Step 1: Make the Crab Filling
Start with the filling because you want it ready before you begin working with the dough.
Place the softened cream cheese in a medium bowl.
Add the drained crab, green onions, garlic powder, Worcestershire sauce, salt, and black pepper.
Mix gently until everything is combined.
Don’t mash the crab completely.
I like leaving a few little pieces of crab throughout the filling because it gives the rangoons a much better texture.
Set the filling aside.
Step 2: Make the Keto Dough
Add the shredded mozzarella and 2 tablespoons cream cheese to a microwave-safe bowl.
Microwave for about 60 seconds.
Stir.
Continue heating in short 15–20 second intervals until the cheese is completely melted and can be stirred together smoothly.
This melted-cheese step is important. Keto fathead dough needs the mozzarella and cream cheese fully melted so the almond flour can incorporate properly.
Add the almond flour and salt.
Stir.
Let the mixture cool for a minute or two so it’s warm but not dangerously hot.
Then add the beaten egg.
Mix quickly until you have a soft dough.
Step 3: Roll Out the Dough
Place the dough between two sheets of parchment paper.
Roll it out until it’s approximately â…›-inch thick.
Try not to make it too thick.
A thinner wrapper gives you a better crispy-to-filling ratio.
If the dough becomes difficult to work with, warm it slightly. Fathead-style dough becomes easier to handle when warm and can become firmer as it cools.
Step 4: Cut the Wrappers
Use a small bowl, biscuit cutter, or round cookie cutter to cut the dough into approximately 4-inch circles.
Gather the scraps, gently press them together, and roll them out again.
Continue until you’ve used all the dough.
You should have around 12–16 wrappers depending on how thin you roll them.
Step 5: Fill the Rangoons
Place one wrapper on your work surface.
Add about 1 tablespoon of crab filling in the center.
Don’t overfill.
This is one of those recipes where it’s tempting to add more because the filling looks so good.
But too much filling makes sealing difficult and can cause the rangoons to open during cooking. Keto versions also recommend avoiding overfilling because it can cause the wrappers to burst.
Step 6: Fold and Seal
Lightly brush the outer edge of the dough with water.
Fold the dough over the filling to create a half-moon or triangle.

Yes.
If you want the closest possible texture to traditional deep-fried crab rangoon, frying will give you the crispiest result.
Heat a neutral oil to approximately 350–360°F.
Fry the rangoons in small batches until golden brown, turning as needed.
Traditional crab rangoons are generally fried until golden and crisp, often taking only a few minutes.
