Crispy Burrata Arugula Pita Pizzas
There are days when I want pizza, but I don’t want to make pizza dough.
I don’t want to wait for yeast to rise, flour the whole kitchen, or spend an hour trying to get the crust just right.
That’s when these Crispy Burrata Arugula Pita Pizzas come to the rescue.
They’re ridiculously easy, but they don’t taste like a shortcut. The pita becomes wonderfully crisp around the edges, the cheese gets warm and melty, and then everything is finished with creamy burrata, fresh peppery arugula, and a drizzle of balsamic glaze.
It’s one of those meals that looks beautiful enough to serve to guests but is easy enough to make when you’re just feeding yourself on a Tuesday night.
I especially love making these on weekends. I’ll put a few pitas on a baking sheet, get the oven nice and hot, and have dinner ready before anyone has time to ask, “What’s for dinner?”
And somehow, every time I make them, everyone gathers around the kitchen waiting for the first slice.
The combination is just so good.
Crispy + creamy + peppery + tangy + slightly sweet.
What’s not to love?
❤️ Why You’ll Love These Pita Pizzas
They’re incredibly easy
There is no homemade dough involved. Store-bought pita does all the work.
The texture is amazing
The pita gets crisp and golden in the oven while the cheese becomes bubbly and creamy.
Burrata makes them feel special
Burrata has a soft, creamy center that melts beautifully when warmed gently. It makes a simple pita pizza feel like something you’d order at a little neighborhood restaurant.
Arugula adds freshness
The peppery bite of fresh arugula cuts through the richness of the cheese perfectly. Similar burrata-and-arugula flatbreads often use fresh arugula as a finishing topping rather than baking it for a long time.
Dinner is ready fast
From start to finish, you’re looking at roughly 20–25 minutes.
🛒 Ingredients You’ll Need
Pita Bread
Use sturdy 6- to 8-inch pita breads.
Whole-wheat pita works especially well, but regular pita is delicious too.
Choose pitas that aren’t extremely thick. A thinner pita tends to crisp up beautifully in the oven.
Burrata
This is the star ingredient.
You’ll want about 8 ounces of burrata, either as two smaller balls or one large ball.
Drain it well before using.
Mozzarella
A little shredded mozzarella gives the pita pizzas a dependable melted-cheese layer underneath the burrata.
Fresh mozzarella can also work, but low-moisture shredded mozzarella helps the pita stay crisp.
Arugula
Use fresh baby arugula.
Don’t put all of it on before baking. Adding it after the pita comes out of the oven keeps it fresh, bright, and slightly crisp.
Marinara or Pizza Sauce
You don’t need much.
A thin layer is all you need because too much sauce can make the pita soft instead of crispy.
Olive Oil
A light brushing of olive oil helps the pita edges turn golden and crisp.
Balsamic Glaze
This is technically optional, but I wouldn’t skip it.
The sweet-tangy balsamic glaze is fantastic with creamy burrata and peppery arugula.
Seasonings
Keep it simple:
Salt
Black pepper
Crushed red pepper flakes, optional
🍕 Ingredients

4 pita breads
1 tablespoon extra-virgin olive oil
¾ cup marinara or pizza sauce

2 cups fresh baby arugula
2 tablespoons balsamic glaze

Crushed red pepper flakes, optional
👩🍳 How to Make Crispy Burrata Arugula Pita Pizzas
Step 1: Heat the Oven
Preheat your oven to 425°F (220°C).
Place a large baking sheet in the oven while it preheats if you want an especially crisp bottom.
A hot baking surface helps the pita begin crisping immediately.
Step 2: Prepare the Pitas
Place the pitas on a baking sheet.
Brush each one lightly with olive oil.
Don’t soak them. A thin coating is plenty.
Then spread a thin layer of marinara or pizza sauce over each pita, leaving a small border around the edge.
I like to leave about ½ inch around the outside so that border becomes beautifully crisp.
Step 3: Add the Mozzarella
Sprinkle the shredded mozzarella evenly over the sauce.
Don’t pile it too heavily.
The goal is a thin, even layer of cheese so the pita remains crispy instead of becoming weighed down.
Step 4: Add the Burrata
Gently tear the burrata into pieces and scatter it over the mozzarella.
Some pieces will be firmer and some will be wonderfully creamy.
That’s exactly what you want.
Season lightly with black pepper.
Save some of the creamy burrata center to spoon over the pizzas after baking if you want an extra-luxurious finish.
Step 5: Bake
Bake for approximately 8–10 minutes, or until the cheese is bubbling and the pita edges are deeply golden and crisp.
Keep an eye on them during the final couple of minutes.
Pitas can go from golden to over-browned quickly.
The general pita-pizza method works because the pita cooks quickly at a high oven temperature, giving you a crisp base without the long baking time of traditional pizza dough.
Step 6: Add the Arugula
Remove the pizzas from the oven.
Immediately scatter the fresh arugula over the top.
The heat from the pizza will soften the arugula just slightly while leaving it fresh and peppery.
This is one of my favorite parts.
You get that contrast between the hot, crispy pizza and the cool, fresh greens.
Step 7: Finish With Balsamic
Drizzle each pizza with balsamic glaze.
Then add a little freshly cracked black pepper and, if you like heat, a pinch of red pepper flakes.
Cut into wedges and serve immediately.
✨ The Secret to Really Crispy Pita Pizza
The biggest mistake you can make with pita pizza is adding too much wet topping.
Remember, pita is much thinner than traditional pizza dough.
So:
Thin sauce.
Moderate cheese.
High heat.
Don’t overload it.
If you want an even crispier crust, bake the pita with just olive oil for about 2–3 minutes before adding the sauce and toppings.
That gives the bottom a little head start.
🥗 What to Serve With Burrata Pita Pizza
These pizzas are filling enough for lunch or a light dinner, but I love serving them with something fresh on the side.
Try:
Simple lemony green salad
Tomato cucumber salad
Roasted vegetables
Italian chopped salad
White bean salad
Tomato basil salad
Vegetable soup
Lentil soup
For a casual weekend meal, I usually put the pita pizzas on a big board alongside a simple salad.
Everyone can grab a slice whenever they’re ready.
🌿 Easy Variations
Burrata, Tomato & Arugula
Add thinly sliced cherry tomatoes before baking.
The tomatoes become soft and jammy while the arugula stays fresh on top.
Burrata & Prosciutto
Add thin slices of prosciutto after baking.
The salty prosciutto is a natural match for creamy burrata and peppery arugula. Similar flatbread recipes pair these three ingredients together for a quick, restaurant-style meal.
Fig & Burrata Pita Pizza
Spread a very thin layer of fig jam underneath the cheese.
Finish with arugula and balsamic glaze.
The sweet fig flavor is wonderful with the creamy cheese.
Spicy Burrata Pizza
Add crushed red pepper flakes before baking and drizzle with hot honey afterward.
The sweet heat is incredible with burrata.
Mushroom Burrata Pizza
Sauté thinly sliced mushrooms first, then add them to the pita before baking.
Don’t add raw mushrooms in a thick layer because their moisture can make the pita softer.
Pesto Burrata Pizza
Replace the marinara with a thin layer of pesto.
Add mozzarella and burrata, bake, then finish with arugula and balsamic glaze.
💡 My Best Tips
Dry your burrata
Burrata is wonderfully creamy, but excess moisture can soften your pita.
Let it drain for a few minutes before using.
Don’t overload the sauce
A little sauce goes a long way.
Add arugula after baking
This keeps it bright and fresh instead of wilted and overcooked.
Use a hot oven
The high temperature is what helps the pita become crisp while the cheese melts quickly.
Watch the edges
The thin pita edges brown quickly.
If they’re getting dark before the cheese is bubbly, reduce the cooking time slightly.
Let them cool for just a minute
Give the pizzas a minute or two before cutting.
Not long enough to cool them down—just enough for the cheese to settle slightly.
🥡 Can You Make These Ahead?
You can prep the ingredients ahead of time, but I recommend baking the pizzas just before serving.
You can:
Wash and dry the arugula.
Drain and portion the burrata.
Shred the mozzarella.
Measure the sauce.
Prepare the pita bases.
Then assemble and bake when you’re ready.
This makes them especially convenient when you’re having friends over.
🧊 How to Store Leftovers
If you have leftover pita pizza, store it in an airtight container in the refrigerator for up to 2 days.
Keep the arugula separate if possible.
When you’re ready to eat, reheat the pizza in a 375°F oven or air fryer until the pita is crisp and the cheese is warmed through.
Add fresh arugula and balsamic glaze afterward.
I wouldn’t recommend microwaving these if you want to preserve the crispy texture. The microwave tends to make pita soft.
❓ Frequently Asked Questions
Can I use naan instead of pita?
Absolutely.
Naan will give you a slightly softer, chewier base, while pita tends to become thinner and crispier.
Can I make these without marinara?
Yes.
Try pesto, olive oil and garlic, or even a very thin layer of ricotta.
Burrata itself is creamy enough that you don’t necessarily need a traditional pizza sauce.
Does burrata go on pizza before or after baking?
Either method can work.
For this recipe, some burrata is baked gently with the mozzarella while fresh burrata can also be added after baking for an especially creamy finish. Different burrata flatbread recipes use both approaches.
Why is my pita pizza soggy?
Usually it’s because there is too much sauce, too many wet toppings, or the pita wasn’t baked at a high enough temperature.
Use a thin layer of sauce and avoid overcrowding.
Can I make this gluten-free?
Yes. Use certified gluten-free pita bread.
The toppings themselves can be naturally gluten-free, but always check the labels of your packaged sauce and other ingredients.
Can I use regular mozzarella instead of burrata?
Yes, although you won’t get the same creamy center.
Fresh mozzarella is a good substitute.
Can I use baby spinach instead of arugula?
Definitely.
The flavor will be milder, but spinach works beautifully as a topping.
What can I use instead of balsamic glaze?
Try a drizzle of balsamic vinegar, hot honey, or a little extra-virgin olive oil.

❤️ The Pizza I Make When I Want Something Easy but Special
I have a soft spot for recipes that make an ordinary evening feel a little more special without requiring much effort.
That’s exactly what these pita pizzas do.
I can imagine making them after a long day when I want something comforting but don’t want to spend the evening cooking. Or on a weekend when everyone is hungry and we want something we can eat casually around the kitchen table.
The first bite is always my favorite.
You get the crunch of the pita first.
Then the warm, stretchy cheese.
Then that ridiculously creamy burrata.
And finally, the peppery arugula and sweet balsamic come through.
It’s such a simple combination, but every ingredient has a job.
And that’s what makes it work.
If you’re serving these to family, I recommend putting all four pizzas on a big board and letting everyone grab their own slices. If you’re making them for yourself, honestly, make two.
You’ll be glad you did.
Crispy, creamy, fresh, and ready in about 20 minutes—this is the kind of easy pizza recipe you’ll find yourself making again and again.
