Chicken Marinade

Method
Marinate the chicken for at least 30 minutes.

2. Mediterranean Roasted Vegetable Salad

- 1 zucchini
- 1 red bell pepper
- 1 yellow bell pepper
- 1 small eggplant
- 1 red onion
- 1 cup cherry tomatoes
- 1 tablespoon olive oil
- 1 teaspoon oregano

- ½ cup chickpeas
- ¼ cup feta
Dressing
- 3 tablespoons olive oil

For layered salads, put sturdier ingredients such as chickpeas and grains on the bottom, followed by vegetables, greens, and delicate toppings.
Add dressing right before eating.
