Quick Chicken Parmesan 🍗🧀

Description:
Quick Chicken Parmesan is a classic Italian-American comfort dish that delivers crispy, golden chicken topped with rich tomato sauce and gooey melted cheese—all in under 30 minutes. This recipe is perfect for busy weeknights when you want something hearty, satisfying, and full of flavor without spending hours in the kitchen. The combination of crunchy breadcrumb coating, savory marinara sauce, and stretchy mozzarella makes every bite irresistible. Whether served over pasta, alongside garlic bread, or with a fresh salad, this dish is guaranteed to become a family favorite.

Ingredients:

  • 2 large boneless, skinless chicken breasts
  • Salt and black pepper (to taste)
  • 1/2 cup all-purpose flour
  • 1 large egg (beaten)
  • 1 cup breadcrumbs (Italian-style preferred)
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 2–3 tablespoons olive oil
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon dried oregano or Italian seasoning
  • Fresh basil or parsley (optional, for garnish)

Instructions:

1. Prepare the Chicken

Start by placing the chicken breasts on a cutting board. Slice each breast horizontally into two thinner cutlets. This step is important because thinner pieces cook faster and more evenly. If needed, gently pound the chicken using a meat mallet or rolling pin until all pieces are of even thickness. Season both sides with salt, black pepper, garlic powder, and oregano for added flavor.

2. Set Up Breading Station

Prepare three shallow bowls:

  • In the first bowl, add the flour.
  • In the second bowl, beat the egg.
  • In the third bowl, combine breadcrumbs with grated Parmesan cheese.

This three-step coating process ensures the chicken develops a crispy, flavorful crust.

3. Coat the Chicken

Take each chicken piece and dredge it in flour, shaking off any excess. Then dip it into the beaten egg, making sure it is fully coated. Finally, press it into the breadcrumb-Parmesan mixture, ensuring an even coating on both sides. Set aside on a plate.

4. Cook the Chicken

Heat olive oil in a large skillet over medium heat. Once the oil is hot, carefully place the breaded chicken into the pan. Cook for about 4–5 minutes on each side, or until the coating is golden brown and crispy, and the chicken is cooked through. Avoid overcrowding the pan—cook in batches if necessary. Once done, transfer the chicken to a plate lined with paper towels to remove excess oil.

5. Add Sauce and Cheese

Reduce the heat to low. Spoon marinara sauce evenly over each piece of chicken. Then sprinkle a generous amount of shredded mozzarella cheese on top of each piece.

6. Melt the Cheese

Cover the skillet with a lid and let the chicken cook for another 2–3 minutes, or until the cheese is melted and bubbly. Alternatively, you can transfer the chicken to an oven-safe dish and broil it for a couple of minutes for a slightly golden, crispy cheese topping.

7. Garnish and Serve

Remove from heat and garnish with freshly chopped basil or parsley for a burst of freshness. Serve immediately while hot and melty.

Serving Suggestions:

Quick Chicken Parmesan pairs beautifully with a variety of sides:

  • Classic spaghetti or penne pasta tossed in olive oil or marinara sauce
  • Garlic bread or toasted baguette
  • Fresh green salad with a light vinaigrette
  • Steamed vegetables like broccoli or green beans

Tips for Best Results:

  • Use freshly grated Parmesan for better flavor and texture.
  • Don’t skip the flour step—it helps the coating stick better.
  • Make sure the oil is hot before adding the chicken to achieve a crispy crust.
  • For a healthier version, bake the chicken at 200°C (400°F) for 20 minutes instead of frying.

Storage & Reheating:

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over low heat or in the oven to maintain crispiness. Avoid microwaving, as it can make the coating soggy.
