Ingredients
4 medium sweet apples (such as Fuji, Gala, or Honeycrisp), cored and chopped
4 large eggs
5 tbsp unsweetened cocoa powder
1 tsp baking powder
Olive oil or butter for greasing the pan
Instructions
Preheat the oven to 350°F (175°C) and prepare a greased cake pan with parchment paper.
Combine apples, eggs, cocoa powder, and baking powder in a blender and blend until smooth.
Pour the batter into the prepared pan and bake for 40–50 minutes until a toothpick comes out clean.
Allow the cake to cool before serving.
Variations and tips
You can enhance the flavor with vanilla extract or cinnamon, or add chocolate chips for a richer texture. For easier slicing, chilling the moist cake can help it firm up. A single serving can be made by blending one apple, one egg, and 2 tablespoons of cocoa powder in a ramekin.
