Crispy Zucchini Veggie Patties
Incredibly delicious, healthy, and made with everyday ingredients. I cook this all the time — and once you try it, you might too!
🛒 Ingredients:

1 medium zucchini, grated

1 medium carrot, grated

1 small potato, grated

4 tablespoons oatmeal (quick oats or rolled oats)

100g cheese, grated (cheddar or mozzarella work great)

A handful of fresh parsley, chopped

2 cloves garlic, minced

Ground black pepper to taste

Optional: pinch of salt, paprika, or onion powder for extra flavor

Olive oil or butter for frying

Prep the Veggies:

Grate zucchini, potato, and carrot.

Use a clean towel or cheesecloth to squeeze out excess moisture, especially from the zucchini.

In a bowl, combine the grated veggies, oatmeal, cheese, parsley, garlic, and black pepper.

Let the mixture sit for about 5–10 minutes so the oats can absorb moisture and help bind.

With your hands, form small, flat patties (like mini pancakes).

Heat a skillet over medium heat with a bit of olive oil.
