Crispy Zucchini Veggie Patties

Incredibly delicious, healthy, and made with everyday ingredients. I cook this all the time — and once you try it, you might too!


🛒 Ingredients:

  • 1 medium zucchini, grated

  • 1 medium carrot, grated

  • 1 small potato, grated

  • 4 tablespoons oatmeal (quick oats or rolled oats)

  • 100g cheese, grated (cheddar or mozzarella work great)

  • A handful of fresh parsley, chopped

  • 2 cloves garlic, minced

  • Ground black pepper to taste

  • Optional: pinch of salt, paprika, or onion powder for extra flavor

  • Olive oil or butter for frying


👩‍🍳 Instructions:

  1. Prep the Veggies:

    • Grate zucchini, potato, and carrot.

    • Use a clean towel or cheesecloth to squeeze out excess moisture, especially from the zucchini.

  2. Mix the Ingredients:

    • In a bowl, combine the grated veggies, oatmeal, cheese, parsley, garlic, and black pepper.

    • Let the mixture sit for about 5–10 minutes so the oats can absorb moisture and help bind.

  3. Form Patties:

    • With your hands, form small, flat patties (like mini pancakes).

  4. Cook:

    • Heat a skillet over medium heat with a bit of olive oil.

    • Fry the patties for about 3–4 minutes per side, or until golden brown and crispy.

  5. Serve:

    • Enjoy warm! Serve as a light meal, side dish, or snack.

    • Great with a dollop of Greek yogurt or sour cream on the side.


🍽️ Tips & Variations:

  • Add a beaten egg if you want firmer patties (especially if skipping cheese).

  • Swap potato for sweet potato for a slightly sweeter taste.

  • Add herbs like dill or chives for a different flavor profile.
