For the Strawberry Layer:

1 packet sugar-free strawberry Jell-O

1 cup boiling water

½ cup cold water
For the Crunch Topping:

2 tbsp freeze-dried strawberries, crushed

2–3 tbsp crushed rice cakes or high-protein cereal (plain or strawberry-flavored)

1. Make the Cheesecake Base
