For the Cheesecake Base:

  • 2 cups fat-free plain Greek yogurt

  • 1 (1 oz) packet sugar-free cheesecake pudding mix (like Jell-O brand)

  • 1 tsp vanilla extract

  • 1–2 tbsp water (only if needed for texture)

For the Strawberry Layer:

  • 1 cup fresh or frozen strawberries, chopped

  • 1 packet sugar-free strawberry Jell-O

  • 1 cup boiling water

  • ½ cup cold water

For the Crunch Topping:

  • 2 tbsp freeze-dried strawberries, crushed

  • 2–3 tbsp crushed rice cakes or high-protein cereal (plain or strawberry-flavored)

  • Optional: ½ tsp zero-cal sweetener (like erythritol or monk fruit)

1. Make the Cheesecake Base

  • In a mixing bowl, whisk together the Greek yogurt, sugar-free cheesecake pudding mix, and vanilla extract.

  • Mix until smooth and thick. If it’s too thick, add 1–2 tbsp water to loosen slightly.

  • Spread into a small 8×8 dish or individual cups. Smooth the top.

2. Prepare the Strawberry Jello Layer
