WW 4 POINTS – RED VELVET CAKE (Serves 15)

A lightened-up, easy Red Velvet dessert using diet soda, fat-free pudding, and Cool Whip.


🥣 INGREDIENTS

Cake

  • 1 box (18 oz) Duncan Hines Red Velvet Cake Mix

  • 8 oz Diet Dr Pepper (or any diet cola)

Topping

  • 1 package (8 oz) Jell-O Fat-Free, Sugar-Free Instant Cheesecake Pudding Mix

  • 2 cups skim milk

  • 1 container (8 oz) Fat-Free Cool Whip, thawed


👩‍🍳 DIRECTIONS

1. Make the Cake

  1. Preheat oven to 350°F (175°C).

  2. Spray a 13×9-inch baking pan with nonstick spray (Pam).

  3. In a mixing bowl, combine:

    • Red Velvet cake mix

    • Diet Dr Pepper

  4. Stir until smooth (no eggs, oil, or water needed).

  5. Pour batter into the prepared pan.

  6. Bake for 30 minutes, or until a toothpick comes out clean.

  7. Allow the cake to cool completely.


2. Prepare the Pudding Layer

  1. Whisk the pudding mix with 2 cups of skim milk.

  2. Let it sit until it thickens (about 3–5 minutes).

  3. Spread the thickened pudding evenly over the cooled cake.


3. Add the Final Layer

  1. Spread Cool Whip smoothly over the pudding layer.

  2. Cover the cake and refrigerate until ready to serve.
