½ cup lite milk (100g)

Preheat Oven:
Preheat your oven to 170°C (340°F). Grease and line a standard loaf or round cake tin. -
Cream Butter & Sugar:
In a large mixing bowl, cream the softened butter and caster sugar together until pale and fluffy (about 3–5 minutes with a hand or stand mixer). -
Add Eggs & Vanilla:
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla essence. -
Dry Ingredients:
In a separate bowl, sift together the flour and baking powder. -
Combine Wet & Dry:
Add the dry ingredients to the butter mixture in two batches, alternating with the milk. Mix until just combined — don’t overmix. -
Bake:
Pour the batter into your prepared cake tin and smooth the top.
Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean. -
Cool & Serve:
Let the cake cool in the tin for 10 minutes, then transfer to a wire rack. Dust with powdered sugar or serve as is!
