🧀 Ingredients
Marinated Feta

250g Feta cheese, cubed

½ cup extra virgin Olive oil

2 tbsp fresh Oregano (or 1 tbsp dried)

1 tsp Red chili flakes

2 garlic cloves, sliced
-
1 lemon (zest + 1 tbsp juice)

2 tbsp sun-dried tomatoes, chopped (optional)

1 tbsp olives brine (optional but adds flavor)
Warm Olives

2 cups mixed Olives (green + black)
-
1 sprig fresh Rosemary
-
1 tsp chili flakes
-
1 tbsp Orange zest
-
1 garlic clove, smashed
-
2–3 tbsp olive oil (from the feta marinade if possible)
To Serve

1 loaf Crusty bread, sliced
-
Optional: Honey drizzle or balsamic glaze
🍴 Instructions
1. Marinate the Feta

In a jar or bowl mix olive oil, oregano, chili flakes, garlic, lemon zest, and lemon juice.

Add feta cubes and gently toss to coat.

Let it marinate at least 1 hour, best if overnight (fridge). Bring to room temp before serving.
2. Warm the Olives

Heat 2–3 tbsp olive oil in a pan.

Add garlic, rosemary, chili, and orange zest. Cook 30 seconds.

Add olives and warm on low for 3–5 minutes (don’t fry, just heat through).
3. Toast Bread

Lightly toast bread slices on a grill or pan until warm and crisp on the edges.
4. Assemble & Serve

Place marinated feta on a platter, pour some marinade over it.

Add warm olives beside it, spoon oil from the pan on top.

Serve with toasted crusty bread.

Optional add a honey or balsamic drizzle for a sweet-savory touch.
