Ingredients

  • 1 package of vegan egg roll wraps (such as Nasoya)
  • 3 cups of oyster and portobello mushrooms, sliced
  • 1 large onion, sliced
  • 1 green bell pepper, sliced
  • 1/4 cup of vegan cheese (such as Daiya mozzarella)
  • 2 tablespoons of liquid aminos
  • 2 tablespoons of worcestershire sauce
  • 2 tablespoons of A1 steak sauce
  • 2 tablespoons of water
  • 1 teaspoon of liquid smoke
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of thyme
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • Oil for frying

Instructions:

  1. In a small bowl, whisk together the liquid aminos, worcestershire sauce, A1 steak sauce, water, liquid smoke, smoked paprika, thyme, garlic powder, onion powder, and cumin. This is the marinade for the mushrooms.
  2. In a large skillet over medium-high heat, cook the mushrooms for about 15 minutes, stirring occasionally, until they release their juices and brown.
  3. Transfer the mushrooms to a large bowl and toss with the marinade. Set aside for 10 minutes to let the flavors soak in.
  4. In the same skillet over medium-high heat, cook the onion and bell pepper for about 20 minutes, stirring occasionally, until they are soft and caramelized.
  5. Season with salt and pepper to taste.
  6. To assemble the egg rolls, lay one wrap on a flat surface and place about a tablespoon of cheese in the center. Top with about two tablespoons of the mushroom mixture and another tablespoon of cheese. Fold the bottom corner over the filling, then fold in the sides and roll up tightly. Seal the edge with some water. Repeat with the remaining wraps and filling.
  7. To fry the egg rolls, heat some oil in a large pot over medium-high heat.
  8. Carefully lower the egg rolls into the hot oil and fry for about 3 minutes per side, or until golden and crispy. Drain on paper towels and serve hot with your favorite dipping sauce.
