⭐ “The Quiche That Stole the Show”
Mediterranean-Style Vegetable, Herb & Feta Quiche
A bright, savory quiche filled with roasted vegetables, fresh spinach, feta, herbs, and a velvety custard inside a golden crust.
🧀🥬 Ingredients (9-inch quiche)
Crust (choose one)
Classic flaky crust

1 ¼ cups (160 g) all-purpose flour
-
½ cup (115 g) cold unsalted butter, cubed
-
½ tsp salt
-
3–4 tbsp ice water
OR use 1 store-bought pie crust (pre-baked).
Mediterranean Filling
-
1 tbsp olive oil
-
1 small red onion, diced
-
2 garlic cloves, minced
-
1 cup cherry tomatoes, halved
-
1 small zucchini, diced
-
1 cup fresh spinach (or ½ cup frozen, thawed & drained)
-
½ cup roasted red peppers, sliced
-
½ cup kalamata olives, sliced (optional but highly recommended)
-
¾ cup crumbled feta
-
½ cup shredded mozzarella or Gruyère
Egg Custard
-
4 large eggs
-
1 cup half-and-half or heavy cream
-
½ tsp dried oregano
-
½ tsp dried basil
-
¼ tsp paprika
-
Salt & black pepper
🍳 Directions
1. Prepare Crust
If using homemade:

Mix flour + salt. Cut in the cold butter until coarse crumbs form.

Add water a tablespoon at a time until dough comes together.

Chill 30 minutes.

Roll out and press into a 9-inch pie pan.

Blind bake at 375°F (190°C):

Add parchment + pie weights
-
Bake 12 minutes
-
Remove weights and bake 5 more minutes
-
If store-bought, just pre-bake 8–10 minutes.
2. Roast the Mediterranean Veggies

Toss tomatoes and zucchini with a drizzle of olive oil, salt, pepper.

Spread on a sheet pan and roast at 400°F (200°C) for 12–15 minutes until lightly browned.

Sauté onions and garlic in olive oil until soft.

Add spinach to wilt.
3. Make the Custard
Whisk together the eggs, cream, oregano, basil, paprika, salt, and pepper.
4. Assemble the Quiche

Layer roasted tomatoes & zucchini on the bottom of the crust.

Add sautéed spinach & onions.
-
Sprinkle roasted red peppers and olives.
-
Add feta and mozzarella evenly.
-
Pour custard over the filling.
-
Press lightly with a spoon to settle everything.
5. Bake
Bake at 375°F (190°C) for 35–45 minutes, or until center is set but still slightly wobbly.
Let rest 10–15 minutes before slicing.
