For the Patties:

2 medium sweet potatoes, peeled and cubed

1 cup kale, finely chopped (stems removed)

1/2 cup cooked quinoa

For the Maple Dijon Drizzle:

2 tablespoons maple syrup

1 tablespoon apple cider vinegar

STEP 1: Cook the Sweet Potatoes

Boil: Bring a large pot of water to a boil. Add cubed sweet potatoes and cook for 15β20 minutes, or until fork-tender.

Drain and Cool: Drain the potatoes and let them cool slightly.

Mash: In a large mixing bowl, mash the sweet potatoes until mostly smooth.
STEP 2: Mix the Patties

Add Ingredients: To the mashed sweet potatoes, add chopped kale, cooked quinoa, green onions, garlic powder, onion powder, salt, and pepper. Mix well.

Add Breadcrumbs: Stir in the breadcrumbs gradually until the mixture holds together and can be shaped.

Form Patties: Shape into 8β10 patties, each about 2β3 inches in diameter.
STEP 3: Cook the Patties
