π INGREDIENTS
For the Salad:
2 medium sweet potatoes, peeled and diced
1 can (15 oz) chickpeas, drained and rinsed
2 cups fresh spinach or mixed greens
Β½ red onion, thinly sliced
Β½ cup cherry tomatoes, halved
ΒΌ cup crumbled feta cheese (optional)
Salt and pepper, to taste
1β2 tablespoons olive oil (for roasting)
For the Maple Dijon Dressing:
3 tablespoons olive oil
1 tablespoon Dijon mustard
2 tablespoons pure maple syrup
1 tablespoon apple cider vinegar
Salt and pepper, to taste
π₯ INSTRUCTIONS
STEP 1: Roast the Sweet Potatoes
Preheat your oven to 425Β°F (220Β°C).
Toss the peeled and diced sweet potatoes with a drizzle of olive oil, plus salt and pepper to taste.
Spread them evenly on a baking sheet in a single layer.
Roast for 20β25 minutes, stirring halfway through, until they are tender and slightly caramelized.
STEP 2: Make the Maple Dijon Dressing
In a small bowl or jar, whisk together:
Olive oil
Dijon mustard
Maple syrup
Apple cider vinegar
Salt and pepper to taste
Mix until smooth and well combined. Set aside.
STEP 3: Assemble the Salad
In a large mixing bowl, combine:
Roasted sweet potatoes
Chickpeas
Fresh spinach or mixed greens
Thinly sliced red onion
Cherry tomatoes
Drizzle the maple Dijon dressing over the salad.
