Stupid Pie – So Easy, It’s Almost Silly!
Ingredients:
1 pre-made pie crust (or homemade)
1 cup shredded coconut
½ cup chopped pecans (or walnuts)
1 cup sweetened condensed milk
2 large eggs
½ cup melted butter
1 tsp vanilla extract
½ cup chocolate chips (optional, but highly recommended!)
Directions:
Preheat & Prep:
Preheat oven to 350°F (175°C).
Place the pie crust into a 9-inch pie pan and crimp the edges. Mix Everything Together:
In a mixing bowl, whisk together sweetened condensed milk, eggs, melted butter, and vanilla extract.
Stir in coconut, pecans, and chocolate chips (if using). Pour & Bake:
Pour the mixture into the pie crust.
Bake for 35-40 minutes, or until the top is golden brown and slightly firm to the touch. Cool & Serve:
Let the pie cool for at least 15 minutes before slicing.
Serve warm or chilled, with whipped cream or ice cream! Times: Prep: 5 mins | Bake: 35-40 mins | Total: 40-45 mins

Pro Tips:
Want it extra gooey? Swap half the butter for cream cheese!
Make it boozy by adding 1 tbsp bourbon or rum.
