🥗 Spicy Shrimp Avocado Salad

🧂 Ingredients

For the Salad:

  • 3 cups mixed greens (romaine, spinach, or lettuce)

  • 1 ripe avocado, sliced

  • ½ red onion, thinly sliced

  • ¼ cup toasted almonds (or cashews)

  • 1 tbsp olive oil (for drizzling)

For the Shrimp:

  • 400g shrimp (peeled & deveined)

  • 1 tbsp olive oil

  • 1 tsp paprika

  • ½ tsp chili flakes (adjust to spice level)

  • ½ tsp garlic powder

  • ½ tsp salt

  • ¼ tsp black pepper

  • Juice of ½ lemon

For the Dressing:

  • 2 tbsp olive oil

  • 1 tbsp lemon or lime juice

  • 1 tsp honey (or maple syrup)

  • 1 tsp Dijon mustard

  • Salt & pepper to taste


👩‍🍳 Instructions

1️⃣ Cook the Shrimp:
In a bowl, toss shrimp with olive oil, paprika, chili flakes, garlic powder, salt, and pepper.
Heat a skillet over medium-high heat and cook shrimp for 2–3 minutes per side until pink and slightly crispy.
Squeeze lemon juice over them and set aside.

2️⃣ Prepare the Salad:
In a large bowl, combine mixed greens, sliced avocado, red onion, and almonds.

3️⃣ Make the Dressing:
Whisk together olive oil, lemon juice, honey, mustard, salt, and pepper until smooth.

4️⃣ Assemble:
Drizzle the dressing over the greens and toss gently.
Top with the spicy shrimp and serve immediately.

  • Add cherry tomatoes or cucumber for extra freshness.

  • For a creamy twist, sprinkle feta cheese or drizzle ranch dressing.

  • Serve chilled for best flavor.
