🥐 Spanakopita Puff Pastry Triangles

📋 Ingredients:

1 sheet puff pastry, thawed

1 cup cooked spinach, chopped and well-drained (fresh or frozen)

1/2 cup feta cheese, crumbled

1/4 cup ricotta cheese (or cream cheese – optional)

1 garlic clove, minced
-
1 egg, beaten (half for filling, half for brushing)

Salt & pepper, to taste

Optional topping: sesame seeds, black seeds, or poppy seeds
🧑🍳 Instructions:
1. Preheat Oven

Set oven to 400°F (200°C). Line a baking tray with parchment paper.
2. Make the Filling
In a bowl, combine:

1 cup chopped cooked spinach (make sure it’s dry)

1/2 cup feta

1/4 cup ricotta or cream cheese (optional)

1/2 beaten egg
-
1 minced garlic clove
-
Salt & pepper to taste
Mix until well blended.
3. Prepare the Puff Pastry

Roll out the puff pastry sheet on a lightly floured surface.

Cut it into 6 equal squares (2 rows × 3 columns), then cut each square diagonally to make 12 triangles.
4. Fill and Fold

Place a spoonful of filling on one side of each triangle.

Fold over and press the edges with a fork to seal (or leave open-faced if you prefer a more rustic look).
5. Finish and Bake

Place triangles on the baking sheet.

Brush tops with the remaining beaten egg.

Sprinkle with sesame or black seeds (optional).

Bake for 15–20 minutes or until puffed and golden brown.
