🥐 Spanakopita Puff Pastry Triangles

📋 Ingredients:

  • 1 sheet puff pastry, thawed

  • 1 cup cooked spinach, chopped and well-drained (fresh or frozen)

  • 1/2 cup feta cheese, crumbled

  • 1/4 cup ricotta cheese (or cream cheese – optional)

  • 1 garlic clove, minced

  • 1 egg, beaten (half for filling, half for brushing)

  • Salt & pepper, to taste

  • Optional topping: sesame seeds, black seeds, or poppy seeds


🧑‍🍳 Instructions:

1. Preheat Oven

  • Set oven to 400°F (200°C). Line a baking tray with parchment paper.


2. Make the Filling

In a bowl, combine:

  • 1 cup chopped cooked spinach (make sure it’s dry)

  • 1/2 cup feta

  • 1/4 cup ricotta or cream cheese (optional)

  • 1/2 beaten egg

  • 1 minced garlic clove

  • Salt & pepper to taste
    Mix until well blended.


3. Prepare the Puff Pastry

  • Roll out the puff pastry sheet on a lightly floured surface.

  • Cut it into 6 equal squares (2 rows × 3 columns), then cut each square diagonally to make 12 triangles.


4. Fill and Fold

  • Place a spoonful of filling on one side of each triangle.

  • Fold over and press the edges with a fork to seal (or leave open-faced if you prefer a more rustic look).


5. Finish and Bake

  • Place triangles on the baking sheet.

  • Brush tops with the remaining beaten egg.

  • Sprinkle with sesame or black seeds (optional).

  • Bake for 15–20 minutes or until puffed and golden brown.


🔁 Make Ahead Tips:

  • You can freeze them before baking. Just bake straight from the freezer, adding 2–3 extra minutes.


🧊 Storage:

  • Store leftovers in the fridge for up to 3 days.

  • Reheat in the oven or toaster oven for crispiness.
