A hands-off, flavorful take on the classic shrimp scampi using your slow cooker.
β Ingredients:

1 lb large shrimp (peeled and deveined, tails on or off)

4 tablespoons unsalted butter (cut into pieces)

4 garlic cloves (minced)

1 teaspoon red pepper flakes (optional)

1 teaspoon Italian seasoning

Salt and black pepper (to taste)

Juice of 1 large lemon (about 3 tablespoons)

Zest of 1 lemon

1/2 cup chicken broth (or seafood stock)

2 tablespoons olive oil

8 oz angel hair or spaghetti (cooked separately)

2 tablespoons chopped parsley (for garnish)

Grated Parmesan (optional)
πͺ Instructions:
STEP 1: Prep the Slow Cooker
Spray the inside of your slow cooker with nonstick spray or lightly coat with olive oil.
STEP 2: Add Ingredients
Place the shrimp in the slow cooker. Add butter, garlic, red pepper flakes (if using), Italian seasoning, salt, pepper, lemon juice, lemon zest, chicken broth, and olive oil.
STEP 3: Cook
Cover and cook on LOW for 1 to 2 hours, or just until the shrimp are pink and opaque. (Avoid overcooking β shrimp cook quickly!)
STEP 4: Combine
Once cooked, stir gently. Serve the shrimp and sauce over freshly cooked pasta or zucchini noodles.
STEP 5: Garnish
Top with chopped parsley and optional Parmesan cheese. Serve immediately with crusty bread or a fresh salad.
