Here’s a simple, foolproof way to make it shine.

Ingredients (2–3 servings)

  • 12–16 oz raw shrimp, peeled & deveined

  • 3–4 medium zucchini, spiralized

  • 1½ cups tomato sauce or crushed tomatoes

  • 3 cloves garlic, minced

  • 2 tbsp olive oil

  • ½ tsp chili flakes (optional but encouraged)

  • ½ tsp Italian seasoning or oregano

  • Salt & black pepper, to taste

  • Fresh basil or parsley (optional)

  • Parmesan or pecorino (optional, but… yes)

How to Make It

  1. Pat the shrimp dry and season with salt & pepper.

  2. Heat 1 tbsp olive oil in a large skillet over medium-high.

  3. Sear shrimp 1–2 minutes per side until just pink. Remove and set aside.

  4. Lower heat to medium. Add remaining olive oil and sauté garlic 30 seconds until fragrant.

  5. Stir in tomato sauce, chili flakes, and Italian seasoning. Simmer 5–7 minutes.

  6. Add shrimp back to the pan and cook 1–2 minutes more until coated and tender.

  7. Toss in zucchini noodles and cook just 1–2 minutes (they should stay crisp-tender).

  8. Taste, adjust seasoning, and finish with herbs + cheese if using.
