Shrimp, Corn, Potato & Smoked Sausage Foil Packets
A simple and delicious all-in-one meal perfect for grilling or baking — minimal cleanup and maximum flavor!
Ingredients:
1 lb (450 g) raw shrimp, peeled and deveined
1 lb (450 g) smoked sausage, sliced (e.g., andouille or kielbasa)
2 cups baby potatoes, halved
2 cups corn (fresh, canned and drained, or frozen)
2 tbsp olive oil
2 garlic cloves, minced
1 tsp smoked paprika
1 tsp Italian seasoning
Salt and pepper, to taste
Fresh parsley, chopped (for garnish, optional)
Instructions:
1. Prep the Grill or Oven:
Preheat your grill to medium-high heat, or preheat your oven to 400°F (200°C).
Tear off 4 large sheets of aluminum foil (about 12 x 18 inches each).
2. Mix the Ingredients:
In a large bowl, combine the shrimp, sausage, potatoes, and corn.
Add olive oil, garlic, smoked paprika, Italian seasoning, salt, and pepper. Toss everything until well coated.
3. Assemble the Foil Packs:
Divide the mixture evenly onto the center of each foil sheet.
Fold the sides over the mixture and seal tightly to create a packet.
4. Cook:
Place foil packets on the grill or on a baking sheet in the oven.
Cook for 20–25 minutes, until potatoes are fork-tender and shrimp are fully cooked (pink and opaque).
5. Serve:
Carefully open the packets (watch out for steam!).
Garnish with chopped parsley if desired. Serve hot — straight from the foil or transferred to a plate.
🌽 Tips & Variations:
For extra flavor, add a squeeze of lemon or a dollop of garlic butter before serving.
Like it spicy? Add Cajun seasoning or a dash of hot sauce to the mix.
